<li>2 cups brown rice</li>
<li>4 cups water</li>
<li>4 skinless, boneless chicken breast halves, cut into 1-inch strips</li>
<li>1 can diced tomatoes, low-sodium</li>
<li>1 cup chili sauce, low-sodium</li>
<li>1-1/2 cups green pepper, chopped</li>
<li>1-1/2 cups cups celery, chopped</li>
<li>1/4 cup onion, chopped</li>
<li>2 cloves garlic, minced</li>
<li>1 Tbsp. fresh basil, chopped (or 1 tsp. dried)</li>
<li>1 Tbsp. fresh parsley, chopped (or 1 tsp. dried)</li>
<li>1/4 tsp. crushed red pepper</li>
<li>3/4 tsp. salt</li>
<li>3 Tbsp. olive oil</li>
</div>
<p>Heat 2 Tbsp. of olive oil in a large pot on medium heat. Add rice and stir until it starts to crackle (about 2 minutes). Add water and 1/2 tsp. of salt. Cover pot and bring to a boil, then reduce heat and allow to cook for about 30 minutes, until rice is soft. In a deep skillet, add 1 Tbsp. of olive oil and preheat over high heat. Cook chicken in skillet until no longer pink (about 4 minutes). Reduce heat and add all other ingredients. Bring to a boil, then reduce to a simmer and cover for 10 minutes. Serve over the cooked brown rice. Makes 4 servings.</p>

			<content:encoded><![CDATA[<p>Many are probably wondering why I am promoting using P90X and other Beach Body products.  Well now you will be able to see my results and ask yourself if your ready!  If you want to know who else is doing P90X then look at my celeb list. Its weird posting pictures of yourself on the web where everyone can see them but I finally stuck with something that was fun and easy to follow.  My pictures below are from my Day 1, Day 30, Day 60 and Day 90.  My neck was a size 16 and now its a size 15.  My biceps have enlarged from size 13 to size 14.  My waist has shrunk tremendously from a size 36 to a wonderful 32 thanks to <span style="color: #0000ff;">Ab Ripper X</span>.  The improvements go on and on but the pictures don&#8217;t lie.  <span style="color: #0000ff;">P90X</span> has really changed my life and it will change yours too!</p>
<p>I look at these first shots and I wonder how I was ever comfortable with  this look.  Oh wait I wasn&#8217;t!  I couldn&#8217;t control what went into my  mouth.</p>

<p>At the 30 day point I was finally not sore anymore and starting to see some progress.  Thanks to the recovery drinks that helped me get through it.  The other thing I noticed at day 30 was that I was sleeping better and had more energy.  Weird what a consistent diet does!</p>
<p>These shots were taken at the family cottage close to my birthday.   Please don&#8217;t look at the hair, for some reason I wanted to try and grow  it out.  At this point I was starting to feel like I could see the light  at the end of the tunnel.  This was around the time when others started  noticing my change take place.  I felt great and started encouraging  others to take the challenge.  What do you think?</p>

<p>I  really think that this program will fit your needs if your committed  to making a lifestyle change like I did. The hardest part for me was  picking one hour throughout the day and scheduling the workout at the  same time no matter what.  I have a little girl (also a little boy)that  wants full attention when I get home from work so I decided to workout  in the wee hours of the morning.  I got up every morning at 5:45am and  then showered and went to work.  This way when I got home I could play  with her and hang out with my wife.</p>

<p>The program came with a nutrition booklet and meal plan as well but I never followed it.  What I did do was read what foods were good and what were bad and made meals accordingly.  The diet that I followed was very simple:  Eat breakfast, lunch and dinner with 3 snacks in between those meals.  I never ate past 8pm and completely cleaned out the cupboards of not so healthy foods.  I also would like to give props to my awesome wife as she truly made this diet work for me.  Always encouraged me and even made most of the meals for me.  She gets the best wife ever award!  We just had our second child and my wife is excited to start P90x or possibly the <a href="http://teambeachbody.com/shop/-/shopping/CHALEAN?referringRepId=29886" target="_blank"><span style="color: #0000ff;">ChaLean</span></a> program soon.  My new journey will begin soon!  <span style="color: #0000ff;"><a href="http://phattyfit.com/revabs-dvd-set" target="_blank"><span style="color: #0000ff;">RevAbs</span></a></span>!</p>

<p><strong>Breakfast:</strong> Egg Whites w/ whole wheat toast and peanut butter <strong>or</strong>Kashi cereal with soy milk <strong>or</strong> 1 cup oatmeal w/ touch of Brown sugar.</p>
<p><strong>Snack:</strong>1 cup of unsalted almonds and a banana <strong>or </strong>a fiber bar(costco has the best deal)</p>
<p><strong>Lunch:</strong>Egg salad on whole wheat bun and side of fresh fruit <strong>or</strong>beach body protein shake <strong>or</strong> grilled chicken salad w/ dressing on the side</p>
<p><strong>Snack: </strong>Energy bar(low in sugar, fat) <strong>or</strong> fiber bar <strong>or</strong>fresh fruit(apple, banana)</p>
<p><strong>Dinner: </strong>Grilled chicken w/ vegetable and baked potato(plain) <strong>or</strong> Grilled salmon w/ veggies <strong>or</strong>Anything with high protein</p>
<p><strong>Sweets at night (before 8pm) for being good:</strong> The only thing I ever had was pudding w/ no sugar, no fat and very little calories</p>
